Title:Potato pies/ pasties
4 to 5 medium-sized Potatoes, boiled and cut into small cubes.
I medium-sized onion, cut in very small cubes.( like in an omelette)
5-7Curry leaves
1/4 tsp fenugreek seeds
1/4tsp onion seeds/ kalonji
1/2 tsp white zeera/Cumin seeds
1/2 tsp turmeric
2 tbsp tamarind paste
1tsp salt
1/2 tsp roasted coriander powder
1/2 tsp cumin powder
1tsp crushed red chilli powder
1/2 tsp paprika powder
2 to 3 tbsp of fresh coriander leaves
1 green chilli cut in thin slices (optional- I usually add very small cubes of capsicum when making for kids lunch)
1 tsp chaat masala ( or according to taste)
1tsp dry fenugreek leaves( kasuri methi)
Ready rolled puff pastry sheets
Oil 2 to 3 tbsp
1 heaped tbsp White flour
Method:
Heat oil in a deep pan, add curry leaves, 1/4 tsp fenugreek seeds,1/4tsp onion seeds/ kalonji ,1/2 tsp white zeera. Fry them for 2 mins until seed splutter and u can smell the curry leaves. Then add chopped onion and turmeric and fry until soft but does not change colour. Then add all other dry spices and add potatoes. Mix thoroughly then add tamarind paste( can add lemon juice if u don't have tamarind paste). When the potatoes are heated thoroughly add a tbsp of flour and quickly mix. This will keep your potato filling nice and dry even if you freeze the pies.
Lastly add coriander leaves, chillies, chaat masala, dry fenugreek leaves and give a final mix. Check the filling for salt and chilli and adjust according to your taste.
Once the filling is cooled, take ready puff pastry sheets, cut them into 10cm squares. Place filling in the centre and fold over into triangle. Seal the edges with a fork.
At this stage you can freeze them.( flat freeze for couple of hours before putting them in a zip lock bag)
Brush the pasties with egg and sprinkle kalongi seeds/ onion seeds on top. Bake at 180 c for 30 to 35 mins or until golden.

Makes around 20 to 22 pasties. You can give your pies/pasties any shape or size according to your convenience.
Variation:
Recently I tried this same filling in frozen parathas and they were amazing!!
Just use normal frozen plain flour parathas when they are slightly defrosted. I used kawan plain parathas. Keep the filling in one side and fold the other side on top. Brush with egg and bake at 210 degrees. Turn the pies over once they are golden from top, around 15-20 mins and then bake for 5 for minutes!!These pies can be a good quick lunch with some fresh green salad and tamarind chutney!
