Paneer Vegetable Masala
Serves 4 Adults.
Masala gravy
Ingredients:
1 medium to large sized onion blended or chopped very small
2 Tomatoes plus 2 tbsp concentrated tomato paste
3tbsp cashew nuts grinded with 3tbsp of milk
1 tbsp Ginger/ garlic paste
1/2tsp Turmeric powder
1tsp Red chili powder
Salt to taste
1 tsp cumin powder
1/2 tsp coriander powder
4tbsp Oil
1tsp Garam masala
2 tsp dried fenugreek leaves
Heat oil in a wok, add onion and turmeric and fry very nicely for 3 to 4 mins . Add ginger garlic and fry a bit more until all is nice and soft. Cut tomato in small pieces or use your food processor to blend it.
Add blended tomatoes and tomato paste. Add all spices and fry thoroughly until a good curry paste comes together. Add 1/4 cup of water to bring it to nice consistency.
Once oil starts to come up on sides add the cashew/milk mixture and fry more. It should be a thick gravy. Turn off the stove and use your stick blender to blend the curry. It would a beautiful light orange colour.
250gms Paneer frozen cubes/ or fresh paneer cut in cubes
1 good sized capsicum. Cut in long strips
1 good sized onion. Cut in thick rings and then separated
1/2cup frozen corn kernels. Boiled in water and then strained/ steamed for a minute in microwave.
Oil and Butter - 2 to 3 tbsp
Heat a good sized frying pan add 1tbsp oil +butter in it and add onion. Cook on slow to medium flame to caramelise and soften. Add to curry base once they caramelize.
Next add cut up capsicum and corn to frying pan. Add more oil if needed. Nicely fry both until they have good colour. Then add to your curry base.
Next fry your paneer cubes on medium flame. Turn them around after every few minutes to give a nice golden colour on all sides. Then add the fried paneer cubes to the curry base. Heat up the curry and give it a good mix with all vegetables and paneer. Add little water if required to bring it to required smooth consistency.
Lastly sprinkle garam masala, dried fenugreek leaves(kasuri mehti), chopped coriander and put on dum( covered and on low flame for 10 minutes)
Your paneer masala is now ready to serve with any of your favourite roti. Enjoy!
