Green Mint Chutney /Chutney toastie/Egg mash kebabs.




  Versatile green chutney ( it’s almost like a pesto)

Ingredients:

Mint 1/4 of a big bunch.(at least 8 to10 sprigs)

Coriander 1/4bunch

Green chili 1/2 or 1 long one

Dessicated coconut 2tbsp heaped 

Garlic cloves 2 to 3

Lemon juice 2 tbsp

Salt 1/2 tsp or to taste

Roasted cumin 1 tsp

Yogurt (thick) 1 heaped tbsp


Method:

Blend all the above ingredients until it becomes a nice smooth paste like consistency.  Taste and adjust seasoning. It should not be watery.

You can freeze it for months. I have even made sandwiches with this green chutney spread and cheese slice and frozen them individually. Quick lunch or snack anytime!!



Different ways to use it.

  

  1. Green Chutney cheese toasties.

 

Spread liberal amount of green chutney on your bread slice and top it off with your favourite cheese slice. Complete the sandwich by adding another slice of bread and slather the top slice with butter. 

Toast is up in your sandwich maker or sandwich press until it’s crispy from top and gooey cheesy from inside!



  1. Egg Mash green chutney kebabs.


Boil and mash potatoes. Season them with salt  and pepper.  Take around 2tbsp of mash in your well oiled palm, spread 1tsp of green chutney on it, add a 1/4 of a boiled egg in the center and then bring the potato mash together to form a oval shape . Dip in beaten egg and deep fry .
