Eid cookies-Basic Butter Biscuits



Add some fun to your Eid table with these delicious biscuits.

 This luscious and buttery biscuit recipe is perfect for any occasion or just your everyday afternoon tea. Crisp from outside and buttery goodness inside. It is a lovely afternoon project on a rainy day to do with kids who will just LOVE the end product. These biscuits can be decorated in hundreds of different ways but they taste ummazzing as it is with out any decorations.

BASIC BUTTER BISCUITS.

INGREDIENTS:

250gms softened butter

3/4 cup icing sugar

1tsp baking powder

1tbsp cornflour

1 tsp vanilla essence

1 egg yolk

2 & 1/2 cups plain flour ( all purpose flour)

Basic icing glacé for decoration.

METHOD:

  1. Preheat the oven at 160°c . Line a couple of baking trays with parchment paper.
  2. In an electric mixer bowl add your softened butter, vanilla essence and sugar. Mix on low speed until smooth. I have even tried this step in my food processor jug with the dough blade.
  3. Next add the egg yolk and mix.
  4. On the lowest setting add you cornflour, baking powder.
  5. Now slowly start adding your plain flour. You may need a little more or little less than 2 1/2 cups. Keep mixing until you get a soft dough. If your mixer does not have dough hook you can fold in the flour with spatula and keep folding until you have the soft dough.If needed use your hands in the end to bring everything together.
  6. Once your dough is ready, divide in to two parts for easy rolling. Dust for working surface with extra flour.
  7. Roll out the dough gently around 7mm thick. Use the desired cookie cutters to cute out different shapes.
  8. For eid cookies we used the crescent, moon, stars and a minaret cookie cutter. 
  9. Place the cookies 2cm apart on your baking tray.
  10. Bake at 160°c  for 10 to 12 minutes or until light golden.
  11. Take them out on cooling racks and decorate with icing pens and the basic icing recipe once they are cool.
  12. Coat each cookie with icing with colour of your choice and then use the icing pen to decorate on top. You can also use melted chocolate  and drizzle on the biscuits.Fill a piping bag or just a zip lock bag, cut a really small piece from one of the sides and use the melted chocolate te to make henna designs on your cookies.
Basic glacé icing recipe
 
Ingredients: 
1 cup icing sugar
2 tblsp hot water.

Method:
Take icing sugar in a medium bowl and add the hot water and mix until a glacé forms. If it’s a bit runny you can add more icing sugar. Divide in to two or more containers to add different colours. 

Biscuits ready to gobble 

We filled a zip lock bag with the basic icing and cut a small opening on side to decorate.
